Fried Garlic Chips

Ingredients

275 grams (1¼ cups) vegetable oil

500 grams (25 cloves) garlic, sliced extremely thin

1 gram (a pinch) sea salt

Directions

Heat the vegetable oil in a sauté pan over medium-high heat until the oil begins to shimmer. Add the sliced garlic and fry, stirring constantly, for 5 minutes or until light golden brown. Using a mesh strainer, drain the garlic from the hot oil.

Transfer the garlic chips to a tray lined with a double layering of paper towel. Season with the salt. The chips will last about 5 days at room temperature sitting on paper towels inside a container with a tightly fitting lid.
